Freshness & Storage note

To enjoy your loaf the same day it was baked, keep it wrapped loosely in a paper bag or clean tea towel at room temperature. This helps protect the crust while avoiding trapped moisture.

Best for Long-Term Storage

By day three, slice the loaf and freeze it in a sealed bag. At this point, your bread enters a cold sleep — preserved and ready whenever you are, with no extra prep.

Why Our Sourdough Tastes Better

Made by someone who truly feels called to make bread

Baking bread is more than enjoyment for me — it’s a historical practice I taught myself through years of study and repetition. I feel called to carry it forward and to pass that knowledge on as a living legacy.

Naturally leavened — no shortcuts

Every Moondough loaf is leavened exclusively with our living starter, Aurora. To achieve the flavor profile people have come to love, I follow a three- to four-day process. On non-baking days, the mother dough is carefully maintained — kept healthy, active, and balanced so it’s always ready for bake time.

Slow fermentation for depth and texture

Extended fermentation allows flavor to develop gradually and the crumb structure to form with intention. The result is bread with balance, character, and a texture shaped by time rather than force.

Simple ingredient philosophy

I work with a short, simple ingredient list.
For our breads and pastries, I use organic, unbleached, unbromated flours. For hydration, I use spring and alkaline water, and for savor, Himalayan salt.

Our mother starter, Aurora, is fed with extra care — including einkorn flour and organic high-gluten flour.

Inclusions are chosen with the same care: high-quality chocolates, vegetables, dairy, herbs, and seasonings that complement the dough with the same level of quality as the flour itself.

Hand-shaped, small-batch baked for consistent crust/crumb

Each loaf is shaped and scored by hand, giving it its own natural design and character. The process isn’t mass-produced, and the quality is held to a high standard every time.

Flavor without limits

Moondough’s combinations are always evolving. Don’t be surprised to see new flavors, inclusions, or styles appear as inspiration shifts. Creativity here is process-driven.

Rooted in community and season

What we bake evolves with the seasons and the tastes of our community. We continue refining our core flavors while using each season as a canvas to introduce new ideas inspired by what our customers request the most.

Meet Our Starter: Aurora

"Aurora came into my hands a few years ago after meeting another superyacht chef returning from a long Atlantic journey. I was excited when she shared a portion of her starter. Later, when I heard the story behind it, I understood the value of what I was holding. She told me how she received it from a bakery in Norway — one that had been open for decades in a town that remains unknown to me, where her vessel had once docked.

While Aurora has since adapted to new flours, water, and climate, her name and identity remain a reminder of that origin — honoring where she came from and the path that eventually brought her to me and to the creation of Moondough."

What Flavor Does It Create?Aurora produces a gentle, balanced tang with a naturally sweet depth and layered aroma. It’s not aggressive or sharp — just complex, clean, and deeply enjoyable. The kind of flavor that’s hard to explain, but easy to love.

Why It Matters (Consistency and Character)?Aurora is a living culture — a natural balance of wild yeast and lactic acid bacteria working in harmony. While I don’t know the exact conditions she was originally created under, I do know she carries the resilience and character of a long-established European-style starter. What matters most is consistency. Aurora responds predictably and brings the same nutritional benefits to each bake.

Customers love Moondough because they know exactly what they’re getting: thoughtfully made sourdough crafted with skill and integrity.

The flavor speaks for itself— sourdough your gut can also enjoy.

More than anything, customers value trust. They know the bread is made with principles, and that the person behind pays attention to the ingredients and to them.

How to Store, Slice, and Refresh Our Sourdough

Like any well-made Artisanal bread, sourdough relies on a few simple practices to maintain freshness longer. How you store and handle your loaf makes a real difference.

Storage

Same-day enjoyment ( Bake day )

To enjoy your loaf the same day it was baked, keep it wrapped loosely in a paper bag or clean cloth. This keeps the crust intact without trapping excess moisture.

Day two post-bake

On the following day, transfer any remaining loaf into an airtight container, bread box, or sealed bag to preserve and extend freshness.

Day Three Post-Bake (Best for Long-Term Storage)

By day three, the best way to maintain quality is to slice the loaf and freeze it in a sealed bag. At this point, your bread enters a cold sleep — preserved and ready whenever you are, with no extra prep.

Important Storage Note: Freezer vs Fridge

🚫 Do NOT store sourdough in the fridge
Refrigerator temperatures (cold but above freezing) cause baked sourdough to stale rapidly. The crumb tightens, moisture redistributes poorly, and the loaf becomes hard much faster than if left at room temperature.

The freezer is your friend
Freezing preserves freshness and flavor. Sliced sourdough can go straight from freezer to toaster, making it the easiest and most reliable storage method. Freezing halts staling rather than accelerating it — which is why frozen sourdough often tastes better than a loaf left on the counter too long.

Refresh Tips

1. Oven refresh (whole loaf)

Preheat oven to 350°F (175°C) Lightly mist the crust with water Place the loaf directly on the oven rack Heat for 8–12 minutes, until the crust feels crisp and the loaf is warmed through This reintroduces moisture and revives the crust without drying out the crumb.

2. Toaster method (sliced bread)

Slices can be toasted straight from frozen or room temperature Use a medium setting and adjust as needed Frozen slices may need one or two cycles to fully thaw and crisp

3.Soft option (my personal favorite)

If you prefer a softer texture, warm a slice in the microwave for 20–35 seconds, depending on your microwave’s strength. It doesn’t need much — usually under 30 seconds. Add butter and enjoy. Note: If you baked the loaf yourself, always let it cool completely before slicing. Cutting too early can trap steam and result in a gummy interior.

Slicing Tips

To obtain those clean, even slices on artisanal breads, your tools and technique will matter more than force. Always stabilize the loaf with one hand placed on the widest part of the bread. Hold the serrated bread knife with the other hand, keeping the blade angled away from you as you cut. Use a sturdy cutting board to keep your cutting surface steady and safe. Aim for slices about 1 inch thick. Thicker slices won’t fit well in a toaster, while thinner ones won’t hold up for toast or sandwiches. If you want perfectly even slices every time, you can also refer to my Bread Tools Guide, where I recommend a sourdough slicing guide designed for consistency. Oval loaves: Slice perpendicular to the length of the loaf. Round loaves: Start cutting from the center, then work your way toward the edges.

Frequently Asked Questions (FAQ)

Where can I buy sourdough bread in Fort Lauderdale?

You can purchase fresh, naturally leavened sourdough bread directly from Moondough Bakery in Fort Lauderdale, Florida, at our Events.

We operate as a micro-bakery offering small-batch sourdough loaves and specialty baked goods available for local pickup on "Bake Day" events and other events we partake in.

Do you offer sourdough pickup or delivery in Fort Lauderdale?

We currently offer:

  • Local pickup by appointment only on "Bake Day" event dates.

  • Serving Fort Lauderdale, Oakland Park, and the greater Pompano area

At this time, we do not offer regular delivery. This allows us to maintain product freshness and quality control. Each loaf is baked the same day it’s picked up — never stored, never mass-produced.

What days do you bake sourdough?

Our bake days vary.

Bake Days are announced in advance on our event calendar.

Do I need to preorder, or can I buy same day?

We strongly recommend preordering. Because we bake in small batches, quantities are limited and often sell out in advance.

Occasionally, extra loaves may be available for same-day pickup, but availability cannot be guaranteed. Preordering ensures your loaf is reserved and baked specifically for you.

What ingredients are in your sourdough?

Our classic sourdough loaves are made with:

  • Organic, unbromated, unbleached Flour

  • Water

  • Salt

  • Natural sourdough starter (Aurora)

Some specialty loaves may include olive oil, herbs, seeds, dairy, or other inclusions, depending on the recipe.

We avoid:

  • Commercial preservatives

  • Dough conditioners

  • Artificial additives

  • Fast-acting yeast in our traditional loaves

Our fermentation process is slow and natural.

Is your sourdough vegan / dairy-free?

Our classic sourdough bread is:

✔ Vegan
✔ Dairy-free

Some enriched loaves (such as sandwich bread or cinnamon rolls) may contain butter, milk, or eggs.

How long does your sourdough stay fresh?

Naturally leavened sourdough typically stays fresh for:

  • 3-4  days at room temperature

  • Up to 5 days when stored properly

  • Longer when sliced and frozen

Because our bread is fermented slowly, it retains moisture better than commercial bread. We provide storage recommendations with each order.

Can you slice the loaf for me?

Slicing is not available. For artisan crusty loaves, we recommend keeping them whole until ready to eat to preserve freshness.

What’s the best loaf for sandwiches/toast/gifting?

For sandwiches:
→ Our Soft Sourdough Sandwich Loaf

For toast:
→ Classic Moondough Artisan Loaf or Whole Wheat Earth Loaf

For gifting:
→ Seasonal specialty loaves or focaccia trays

If unsure, we’re happy to recommend based on your needs.

Do you make gluten-free sourdough?

We offer select gluten-free sourdough bread and pre-ordered gluten-free specialty items. However, our kitchen is not a certified gluten-free facility. I work carefully to prevent cross-contamination.
