Our rhythm is guided by lunar and cosmic inspiration, allowing natural processes the time and space they need to grow — and creativity the freedom to flow. We find joy in nourishment, not only in feeding bodies, but in cultivating understanding.

My aim for Moondough is to nourish the community with healthier bread — both by baking it and by sharing the knowledge behind it. For those curious enough to learn, the recipes and methods remain an open transmission. My hope is that you, too, can bring that value to your own table, with your own hands, whenever the moment calls for it.

Moondough is not built simply to create customers, but to train and equip capable baking pilots — people with the skill, confidence, and understanding to operate independently. To turn those who love to eat bread into those who know how to make it, share it, and live more sustainably because of it.

This is the greater goal behind Moondough: to feed, to teach, and to multiply — so what begins at one table can travel far beyond it.

Our Sourdough Philosophy

At Moondough, our mission is simple: bake to the moon and back. What began as a spark of curiosity to master sourdough has grown into a journey of taking bread to the stars - with the universe as our only limit.

Moondough’s mindset is rooted in the belief that a limitless universe reflects limitless opportunities. Every loaf we bake carries that intention. 

To us, sourdough is more than a recipe — it’s culinary alchemy. It’s the transformation of simple base ingredients into a complex, living structure that nourishes. What begins as flour, water, and salt becomes something greater through time—a transformation that turns base ingredients into edible gold.

At Moondough, we use our living mother dough to slowly leaven and ferment each batch, allowing:

Meet Our Starter

At the heart of Moondough Bakery is Aurora, our 43-year-old sourdough starter of Nordic heritage. She is fed, maintained, and protected daily, and serves as the foundation of every loaf we bake. Through Aurora, we create bread that is naturally leavened and thoughtfully fermented — crafted using traditional methods and guided by experience rather than shortcuts. Paired with a spark of outer-space creativity, our loaves are both timeless in process and quietly innovative in expression.

A Note from the Founder

In 2023, I came into stewardship of this unique mother dough through the yachting industry — in a way that felt unexpected, yet purposeful. I immediately recognized the value she carried and named her Aurora, inspired by the Aurora Borealis and her Nordic heritage. Over time, sourdough taught me something deeper about stewardship: what is placed in our hands is meant to be cared for, multiplied, and shared with intention. Aurora became a daily reminder of that responsibility. My brand — and her name — reflect my fascination with the moon, the stars, and the vast cosmic wonders that surround us. Starting Moondough felt much the same: like stepping into space and choosing to launch, rather than letting the unknown limit what could be created.

From Kitchen to Community

Our Origin

The inspiration to create Moondough came to me during The Greatest Baker competition, which ran from October 2024 through January 2025. Sourdough became the foundation that carried me forward to a semi-finalist placement in December 2024 — made possible through the support and encouragement of my community. That season marked a pivotal moment and became the source of inspiration to bring the vision for Moondough into reality.

From that point on, I began laying the groundwork for Moondough, allowing its structure and purpose to take form over time while continuing my career as a superyacht chef. While Moondough came into focus in 2024, the seed for it had been sown long before that moment. What may have appeared to others as simply a competition was, for me, the unfolding of something God had already been quietly orchestrating for a greater purpose.

None of this would exist without the extraordinary support of the community — locally across Broward County and through North Miami, and extending into a wider international online space. That early encouragement and belief acted like mission clearance: the confirmation needed to move forward, build confidence, and initiate Moondough’s first true launch sequence. Their support transformed an idea into a real, working vision — and turned preparation into forward motion.

As Moondough continues to grow and explore new ways to make our bread more accessible, we remain deeply loyal to the processes that define us. Expansion will never come at the cost of integrity. The same patience and intention that shaped Moondough from the beginning will continue to guide every bake as this journey continues to unfold.

What We Bake

As a superyacht chef, Moondough’s founder has the ability to bake across a wide range of styles. However, in order to maintain focus and consistency in quality, Moondough specializes primarily in naturally leavened sourdough bread. This is where our craft is prioritized and where our weekly offerings are centered.

In addition to bread, we offer select specialty desserts by preorder, including unique cheesecakes and custom themed cakes, depending on availability. These are produced in limited quantities and approached with the same care and intention as our loaves.

Our weekly menus typically include:

  • Classic, yet distinctive sourdough loaves unique to Moondough
     

  • Seasonal sourdough variations, inspired by the time of year and creative exploration
    (think fall pumpkin, winter holiday specials, or summer-forward flavors)
     

  • Sweet sourdough loaves, crafted to balance richness and natural fermentation
     

  • Cookies and cinnamon rolls made with sourdough discard, offering deeper flavor and a more balanced sweetness
     

  • Specialty desserts and baked goods, including cheesecakes available by preorder only, with rotating flavors and toppings
     

  • Limited-batch specialty items are announced through Instagram or at local farmers' markets.

Availability changes weekly based on mission capacity, fermentation timelines, ingredient sourcing, and the founder’s professional schedule. During active superyacht assignments, Moondough may temporarily enter standby mode. When missions are live, every bake is executed with full focus, precision, and care — never rushed, never compromised.
